RECIPE: LAYERED YOGHURT & BERRY BLISS PARFAIT

Holy amazeballs. This is so divine! You are going to love this. If you are like me and try to steer clear of refined and processed sugars and carbs that are laden in most breakfast cereals, and baked goods, firstly, good on you, and secondly…this recipe is for YOU!

This is a great option for breakfast (for a couple days) or as a healthy snack throughout the day. It is packed full of antioxidants, proteins and is a great source of minerals.

I have been a little ‘loose’ around the quantity of ingredients because this is one of those recipes where you can make it up as you go along depending on what you like.

 

Serves – 1+

Time – 10 – 15 minutes

Facts – Grain free, dairy free, free from processed & refined sugars

Need – An eco friendly glass jar for assembling

Ingredients 

300-400 g Tub Dairy free yoghurt (you can use sheeps, goat or coconut yoghurt)

1 Punnet Raspberries (preferably organic)

½ Punnet Blueberries (preferably organic)

Pinch of cinnamon

Homemade granola (coconut flakes, coconut oil, mixture of nuts such as almonds, cashews, walnuts, pecans, pepitas – combine and bake in the oven until golden and crunchy)

Loving Earth ‘Buckinis’ Mix OR make your own using:

Buckwheat

Dry Goji berries

Activated pepitas

White mulberries

Pecans

How to make


Step 1: Rinse and dry fresh berries

Step 2: Put a large scoop of yoghurt into the jar and even out to cover the base of jar and up the sides slightly

Step 3: Get fresh raspberries and place them on top of the yoghurt up the sides of the glass jar, pressing them into the glass to they are smashed and create a ‘jam’ looking substance on the glass.

Step 4: Pour/Scoop granola and buckini mixture on top of the yoghurt enough to be level with the berries.

Step 5: Put another layer of yoghurt into the glass jar, making sure it is spread around the inside of the glass jar.

Step 6: Repeat process with berries, then granola and buckini mixture.

Step 7: Put one more layer of yoghurt into jar, then sprinkle desired amount of cinnamon.

Step 8: Put a blueberry into the center hole of a raspberry, then repeat until you have enough berries to cover the opening hole of the jar.

Step 9: Put ‘raspblueberries’ on top of the yoghurt so the berries look like they are popping out of the jar.

Step 10: Enjoy, share with a friend or give to someone as a gorgeous homemade gift.

*Best consumed within 3-4 days of making (provided all ingredients are fresh)
